Preparation
Kaju Katli, also known as Kaju Barfi, is a popular Indian sweet made from cashew nuts and sugar. It is often enjoyed during festivals and special occasions. Here’s a step-by-step guide to making Kaju Katli at home.

Step 1: Prepare the Cashew Nuts
Soak the cashew nuts in water for about 2 hours.
Drain the water and place the cashew nuts in a blender or food processor.
Grind the cashews into a fine powder. Be careful not to over-grind, as it can turn into cashew butter.
Step 2: Make the Sugar Syrup
In a pan, combine sugar and water. Heat over medium flame.
Stir until the sugar dissolves completely.
Bring the mixture to a single thread consistency. You can check this by taking a drop of syrup between your fingers; it should form a single thread.
Step 3: Combine Cashew Powder and Sugar Syrup
Once the sugar syrup reaches the right consistency, reduce the heat to low.
Add the cashew powder to the syrup and mix well.
Add cardamom powder and ghee, and continue to cook while stirring constantly.
Cook until the mixture starts to leave the sides of the pan and forms a dough-like consistency.
Step 4: Shape the Kaju Katli
Transfer the mixture onto a greased surface or parchment paper.
Allow it to cool slightly, then knead it gently for a minute.
Roll the dough into a flat sheet using a rolling pin. Aim for a thickness of about 1/4 inch.
If using, place the edible silver leaf on top.
Cut the rolled sheet into diamond or square shapes using a sharp knife.
Step 5: Cool and Serve
Allow the Kaju Katli to cool completely at room temperature.
Once cooled, separate the pieces carefully.
Store in an artight container at room temperature or in the refrigerator.
